Pumpkin Spice Granola

Ingredients

  • 5 cups rolled oats

  • ½ c quinoa

  • 1/4 cup sunflower seeds

  • 1/4 cup pumpkin seeds (chopped)

  • 1/4 cup coconut flakes or shredded coconut

  • ¼ c nut of choice

Wet ingredients

  • ⅓ c pureed fruit (1 banana, applesauce, pumpkin)

  • ¼ c plant milk

  • ¼ c nut butter

  • 2 tsp vanilla

  • ¼ c maple syrup or 6-8 Medjool dates, pitted

  • 3 t spice (cinnamon, pumpkin pie, gingerbread)

  • pinch of salt (optional)

  • 1 cup dried fruit (add after the granola is done baking - optional)

Directions

  1. Mix dry ingredients in a large mixing bowl.

  2. Add wet ingredients to a blender and blend on high until smooth.

  3. Add wet ingredients to dry and mix thoroughly

  4. Spread granola evenly onto a lined baking sheet

  5. Bake for 60 minutes and turn off oven. Leave for 4-6 hours or overnight until completely cooled.

  6. Add raisins once granola is cooled.

  7. Store in airtight container for 10-14 days.
