
Pumpkin Spice Granola
Ingredients
5 cups rolled oats
½ c quinoa
1/4 cup sunflower seeds
1/4 cup pumpkin seeds (chopped)
1/4 cup coconut flakes or shredded coconut
¼ c nut of choice
Wet ingredients
⅓ c pureed fruit (1 banana, applesauce, pumpkin)
¼ c plant milk
¼ c nut butter
2 tsp vanilla
¼ c maple syrup or 6-8 Medjool dates, pitted
3 t spice (cinnamon, pumpkin pie, gingerbread)
pinch of salt (optional)
1 cup dried fruit (add after the granola is done baking - optional)
Directions
Mix dry ingredients in a large mixing bowl.
Add wet ingredients to a blender and blend on high until smooth.
Add wet ingredients to dry and mix thoroughly
Spread granola evenly onto a lined baking sheet
Bake for 60 minutes and turn off oven. Leave for 4-6 hours or overnight until completely cooled.
Add raisins once granola is cooled.
Store in airtight container for 10-14 days.
Enjoy warm or cold.
